I did intend for my next blog to be a short story about where I had disappeared to for the last few months. I had been itching to write a new blog entry for my baking diaries for quite some time, however, I was waiting until I unpacked into my new shiney kitchen! BUT since then an awful lot has happened, which includes a lock down!
I have been MIA for a few months due to some unforeseen circumstances, but I am about to rekindle my baking flame and make a come back. Perfect timing, lock down means I have quite a bit of free time now to indulge in my baking pleasure.
Firstly, before lock down, I made some butterfly cupcakes and banana bread for my allocated cake day at work (had lots of wonderful reviews!). Since lock down began I have been having the best time baking, not only has it rekindled my baking flame it has reminded me of one of my favorite things to do, bake beautiful cruelty free cakes.
Since lock down I have created Cats Protection themed Cupcakes for a cake competition I ran with the local branch I volunteer at.

I have made welsh cakes, banana breads, Portuguese tarts and hummus scones. Following this I have lots of new cakes to make - I have already started collecting screen shots on Pinterest! I can’t wait to start my new challenge in a brand-new location, and with lock down comes lots of time to create all these new treats. Lock down might have stemmed from negativity but it is how you approach any situation that changes its outcome. So be positive and make the most of every moment, oh and don't forget to drink tea, eat cake and always be kind.
